Irish Baking Team scoops second prize in the European Bakery Cup

The Irish Baking Team took 2nd place in the "European Bakery Cup" finals in Denmark yesterday (30th March, 2004). They triumphed over teams from eight other countries but were narrowly beaten by the Swiss team, who are described as the 'masters of the trade'.

The team includes Robert Humphries, Bread specialist, Dolores Spain, Pastry Specialist, and Michelle O'Connor, Artistic piece; all staff members from Dublin Institute of Technology's School of Culinary Arts and Food Technology. The team manager is Jimmy Griffin, President of The Irish Richemont Club & Griffins Bakery Galway.

Acording to Derek O'Brien, DIT School of Culinary Arts and Food Technology, "For the Irish team to have come so close behind Switzerland indicates the high standard of excellence and expertise the Irish hold. This is a fantastic achievement for the team who has worked closely together over the last few years to hone their expertise, achieving 3rd place last year and hopefully first place next year."

The teams had to produce a range of breads, pastry and an artistic piece in an eight hour period. Everything had to be produced on the day and to a given specification. The theme for this years Competition was 'Carnival' so all products produced had to reflect a carnival theme and had to compliment that theme.

Denmark, the host country, took third prize. The other countries represented were Iceland, France, Poland, Romania, Luxemburg, Holland and Italy.
