Module Description

The aim of this module is to provide an understanding of the micronutrients and their roles in human health and disease. This module builds on first year and Nutrition Science 1 by covering the main micronutrients and their relative importance for various population groups and subgroups. The functions and metabolism of the micronutrients in the body are explained. The concepts of the assessment of nutrient status and nutrient requirements are built up. This knowledge is the foundation for study of nutrition-related health issues in future years of the course.

Indicative Syllabus

The micronutrients: water-soluble vitamins and fat-soluble vitamins, minerals and trace elements including bone minerals and anaemia-preventing nutrients; giving in each case the biochemical and physiological functions, food sources, absorption, metabolism and excretion, deficiency and toxic effects,
assessment of nutrient status, recommended intakes.
