Learning Outcomes
On Completion of this module, the learner will be able to
1. Recognise the importance of hygienic design and disinfection operations in food facilities for the production of safe food
2. Assess potential physical, microbial and allergen contamination during food production and demonstrate knowledge of controlling such contaminants
3. Demonstrate knowledge of current guidelines and specifications in the production of safe food
4. Describe typical food processing operations applied in the food chain
5. Examine and communicate food safety practices in a given food processing facility
6. Evaluate the rational behind the development of novel processing operations.
