Overview

Module Description

This course provides an update on etiological agents in foodborne disease and the microbiological aspects of food safety. An in-depth study of microbiological risk analysis is also presented to include risk assessment, risk management and risk communication. The application of predictive microbiology to risk assessment and food safety will also be examined.

Application of predictive microbiology in risk assessment
Integration of predictive microbiology with HACCP and risk assessment to enhance food safety
