Overview
Role of hygiene in food industry and the development and maintenance of appropriate documented hygiene standards and practices in commercial premises. Introduction to Quality, Quality Control, Quality Assurance, and the systems used to manage quality and hygiene along the food chain. Introduction to Prerequisite Programmes and HACCP as a food safety system.
Indicative SyllabusIntroduction to quality, quality control, quality assurance, hygiene & food safety.
Components of food safety & quality systems: senior management commitment, HACCP, safety & quality management system, site standards, product control, process control, personnel control.
